Chocolate Strawberry Banana Pudding

Good morning!

Sadly, today is the last day of my week long dog sitting gig. The parents fly back in tomorrow morning.

I am sure the beasts will be happy to know that their parents are coming back. Reese always becomes neurotic when mommy and daddy leave for an extended period of time. Poor pooch!

Now onto the pudding.

Not really pudding, but a overly thick smoothie? Who cares about the name, it was just darn good.

Chocolate Strawberry Banana Pudding

285 calories/35g carbs/31g protein

  • 1 tsp xanthan gum
  • 5 large frozen strawberries
  • ½ banana
  • ¾ cup almond milk
  • 1 scoop chocolate protein powder (vanilla works too!)

Blend all the ingredients together. The result will be nice and fluffy! Thanks to the xanthan gum.

Xanthan gum? What the heck is that you ask?! Basically it adds volume and viscosity to bread and other gluten-free baked goods. Obviously can be used in smoothies!

  1. Looks delicious! Usually I never put my smoothies in glasses because they end up being super thick anyways, and my boyfriend always looks at me weird when he sees me eat it with a spoon out of a bowl. (p.s. – I’m also in the Seattle area, so, hi!)
