Breakfast and Dessert

Good afternoon! I am back with some yummy goodness.

I’ve been trying to experiment with Paleo and Gluten Free recipes lately. So far I’ve loved everything I’ve made. There have been many runs to the store to find Coconut flourAlmond flour,  Splenda brown sugar blend and many other ingredients, but that is okay!

Here are two of the latest creations

One was stolen before I could capture a picture. Hmm…:)

Blueberry Scones (recipe from Taylor Made it Paleo)

Yields: 8 scones

Ingredients:

2 cups Almond flour

1/4 tsp salt

1 tsp baking soda

3/4 cup blueberries

1 egg white

1 Tbsp honey

Directions:

Preheat oven to 375 degrees and grease a cookie sheet

Mix together dry ingredients in a bowl

Mix together egg whites and honey

Mix in the wet ingredients with the dry ingredients

Kneed in blueberries and roll the mixture into a dough ball

Flatten dough into one large circle

Cut into 8 small triangles

Bake for 10 minutes or until the edges begin to turn brown

Let cool and top with your favorite jam or just eat it as is!

Easy peasy right? Yep! Only took me like 20 minutes to prepare and bake the scones.

Nutrition: 63.6 cals/5.7g carbs/2.3g pro/4g fat

Now onto dessert!

Paleo Chocolate Almond Brownies w/ Protein! (recipe from Health Nut Julie)

Ingredients:

3.5 scoops BioGenesis Chocolate Protein powder

2 egg whites

5 pkts Stevia

1/4 cup unsweetened cocoa powder

3 Tbsp Peanut Butter

1.5 cups unsweetened Almond milk

1 tsp baking powder

Directions:

Preheat oven to 350 degrees

Mix ingredients together in a large bowl

The mixture should be nice and thick

Pour into a square baking pan

Bake for 25 minutes. Start checking on them at 20 minutes to see if they are done

Perfection! Sorry for the unattractive pans, they are quite old. Probably older than me?!
