What the Bake Friday!

I’ve got blueberries on the brain peeps!!! Actually berries of all kind, but after blueberry picking last month, they are coming out of my ears for god’s sake.

Blueberry Cinnamon Yogurt Bread

Recipe thanks to Anne from Fannetastic Food

Yields: 3 mini loaves or 1 large loaf.

Ingredients:

1 cups whole wheat flour

½ cup brown sugar

1 Tb. Cinnamon

1 tsp. baking powder

1 tsp. baking soda

½ tsp. salt

½ cup applesauce

1 cup almond milk

½ cup plain yogurt

½ cup blueberries

1 tsp. vanilla extract

Directions:

Preheat oven to 350 degree F.

Mix dry ingredients together.

Mix wet ingredients together and add to the dry ingredients.

Mix batter well and add in blueberries.

Pour into mini bread pans or one large 9×5 bread pan.

Bake in the oven for 33-35 minutes for mini bread pans or 55 minutes for a 9×5 pan.

Let cool, then slide and serve!

Since blueberries are taking over my life….I decided to make a Blueberry Vanilla Spinach Smoothie for Day 5 of the 14 Day September Smoothie Challenge!!

The mixture included: a handful of spinach, 1 scoop designer whey vanilla protein powder, handful of blueberries, 5 ice cubes, 1/2 cup water and 1/4 tsp xanthan gum for thickening.

Yes, I drink my smoothies in glass mugs sometimes. You gotta mix it up! 😉
